Ingredients
- 1 tbsp olive oil
- 1lb ground beef
- 1 tbsp taco seasoning
- 1 can refried pinto beans
- 3 tbsp Cloud23 Sweet Jalapeño Hot Sauce, plus more for topping
- 1 bag tortilla chips
- 12oz shredded Mexican cheese
Toppings
- ½ cup cooked corn kernels
- 1 jalapeno, sliced
- ½ cup pickled onions
- ½ cup sour cream
- ½ cup guacamole
- ¼ cup cherry tomatoes, diced
- ¼ cup scallions, sliced
- ¼ cup cilantro or parsley
- Cloud23 Sweet Jalapeño Hot Sauce
Directions
Preheat oven to 350 degrees.
- Preheat a saute pan over medium heat. Add the olive oil, then the ground beef, using a wooden spoon to break it up as you stir. Add the taco seasoning and cook until the beef is browned and fully cooked through - about 7-8 minutes. Add the refried beans, and then the Cloud23 Sweet Jalapeño Hot Sauce. Stir until well combined.
- Place the tortilla chips on a baking sheet and layer with half of the shredded cheese. Add the meat and bean mixture, then layer on the remaining cheese. Bake until cheese is melted, about five minutes.
- Layer on the remaining toppings and enjoy hot.
